Along with the USDA, researchers from the University of Maryland completed a study researching the concentration of nutrients among various microgreens. Findings from this 2012 study show that microgreens contain approximately four to 40 times greater vitamins, antioxidants and other nutrients then when fully mature.
Microgreens pack a larger nutritional punch than their mature counterparts; however, they come in a 'micro' package. These little greens are truly nature's miracle, and are really worth their weight in gold for your health.
